  6. One of our Cheesemakers created homemade snack crackers using our seasonal cheese Black Swan. We got such a response on Twitter and Instagram, that we wanted to share the recipe with everyone. Check it out:
Ingredients:
- 8 oz extra-sharp cheese, coarsely shredded
- ½ stick unsalted butter, room temperature
- 1 tsp kosher salt
- 1 cup flour
- 2 T water, iced
Directions: Cream the cheese, butter, and salt in stand mixer until combined. Add the flour until it looks crumbly. Then, slowly add the water until the dough forms a ball. It may take 15 seconds or so for the dough to make a ball after you add the water so be careful not to add much more. Pat the dough into a disk and refrigerate for 1 hour. Then, roll the dough to 1/8 of an inch.
Preheat the oven to 375F
Cut the dough into 1” squares with a pastry wheel or pizza cutter. Poke a hole in the center with a chopstick and bake for 12 minutes.
